A very bready cup cake with the richness of paneer, cheese and Indian spices

Ingredients Serving: 10

  1. Whole wheat flour 250 gm ( 2 cups )
  2. Instant yeast 1/2 tsp
  3. Sugar 1 tsp
  4. Olive oil 2 tbsp
  5. Salt as per ur taste
  6. Milk plus warm water (50:50) almost 1 cup 
  7. Paneer crumbled 150 gm
  8. Onion 1 cut into small pieces
  9. Capsicum 1 cut into small pieces
  10. Tomato 1 deseeded and cut into small pieces
  11. Coriander leaves 1 tbsp
  12. chilli powder 1 tsp
  13. coriander powder 1 tsp
  14. Grated cheese 2 tbsp
  15. Garam masala 1/2 tsp

Instructions

  1. Heat oil in a pan. Saute onion till translucent. Add capsicum, tomato, salt and other spices and mix well.
  2. Add crumbled paneer and coriander leaves and mix well. Allow it to cool.
  3. Mix whole wheat flour, sugar, salt and instant yeast well. Add milk--water mixture and combine.
  4. Add oil and knead into a smooth elastic dough for 10--12 minutes
  5. Allow it to rise in an oiled bowl, covered with a cling film for an hour, or till it doubles.
  6. Gently punch the dough and knead for 1--2 minutes on a floured surface. Divide the dough into small pieces. ( I got 16 balls each approx 35--40 gms in weight ).
  7. Roll into small puris and place them in a greased cup cake mould or muffin tray or silicone cups.
  8. Lightly press the dough into the cups. Fill each cup with the paneer filling.
  9. Allow it to prove again for 30--35minutes. Preheat the oven for 10 minutes at 180 degrees. Bake for 18--20 minutes
  10. Sprinkle little grated cheese over the cups and increase the temp to 200--220 degrees and bake again for 3--4 minutes till the cheese melts and u get a nice golden crust.
  11. Remove from oven and serve hot with sauce or any dip of your choice.
