ABOUT Red Velvet Cookies RECIPE

Healthy and delicious red velvet cookies, made with beetroot juice for that extra dose of healthiness with the deliciousness of cookies.

Ingredients Serving: 6

  1. 1 + 1/2 cups 1 TBsp whole wheat flour
  2. 1/4 cup cocoa powder
  3. 1 teaspoon baking soda
  4. 1/4 teaspoon salt
  5. 1/2 cup unsalted butter, softened to room temperature.
  6. 3/4 cup brown sugar
  7. 1/4 cup sugar
  8. 1 large egg, at room temperature
  9. 1 Tablespoon milk
  10. 2 teaspoons vanilla extract
  11. 1.5 tbs beetroot juice(boil beets and sieve them in muslin cloth)
  12. 1 cup semi-sweet chocolate chips

Instructions

  1. Whisk the flour, cocoa powder, baking soda, and salt together in a large bowl. Set aside. Using a handheld or stand mixer with a paddle attachment, beat the butter on high speed until creamy, about 1 minute.
  2. Beat in the brown sugar and granulated sugar until combined and creamy, Beat in the egg, milk, and vanilla extract, scraping down the sides. Once mixed, add the beet colour and beat until combined. Turn the mixer off and pour the dry ingredients into the wet ingredients.
  3. Turn the mixer on low and slowly beat until a very soft dough is formed. ADD more beet juice if you'd like the dough to be brighter red. On low speed, beat in the chocolate chips. The dough will be sticky.
  4. Cover the dough tightly with aluminum foil or plastic wrap and chill for at least 1 hour. Preheat oven to 180 degrees Line two large baking sheets with parchment paper or silicone baking mats. Set aside.
  5. Scoop 1.5 Tablespoons of dough and roll into a ball,Place 9 balls onto each baking sheet. Bake each batch for 10-11 minutes. T
  6. he cookies may have only spread slightly, tha's ok. Simply press down on the warm cookies to slightly flatten and form crinkles. Stick a few chocolate chips into the tops of the warm cookies
