Ingredients Serving: 2

  1. 1 cup white rice (semi cooked)
  2. 2 tbsp olive oil
  3. I medium size onion, chopped
  4. 1 carrot, grated or chopped
  5. 3 cloves garlic, pressed
  6. I tsp orange zest
  7. 1/2 tsp Dry thyme
  8. 1/2 tsp fennel powder
  9. 1/2 cup tomato puree
  10. 2 Cups Water
  11. 2 tomatoes, chopped
  12. 1 cup vegetable stock
  13. salt as needed
  14. 1 tsp sugar
  15. 4-5 fresh basil leaves for garnish

Instructions

  1. Heat oil in a pan and saute onions, carrot, garlic, orange zest, thyme and add fennel powder.
  2. Once the vegetables starts to soften, add tomato paste and water. Mix well till everything is incorporated well.
  3. Add in the chopped tomatoes now along with vegetable stock and season with salt, pepper and sugar.
  4. As it starts boiling add semi cooked white rice. Close the lid and simmer for around 12-15 mins until the rice is tender.
  5. Pour in the soup into bowls, add a swirl of fresh cream and garnish with fresh basil and crushed dry thyme.
