Ingredients Serving: 4

  1. 3-4 Finely sliced onions
  2. 2-3 green chillies finely chopped
  3. 1 1/2 tbsps. Ginger garlic paste
  4. 2-3 Finely chopped medium tomatoes
  5. 3-4 tbsps. Curds
  6. 2 1/2 tsp. Red chili powder
  7. 2 1/2 tsp. Coriander powder
  8. 1 tsp. Turmeric Powder
  9. 1 tbsp. Garam masala or Chicken curry powder of your choice
  10. 4-5 tbsps. Finely chopped green coriander leaves
  11. One satchet Maggi Coconut Milk Powder or fresh coconut milk from 1/2 small coconut
  12. Salt to taste
  13. 4-5 tbsps. Oil

Instructions

  1. Clean, wash and dry chicken.
  2. Add 1 tsp. Each of red chilli powder, coriander powder, 1/2 tsp. Turmeric powder, 1/2 tbsp. Ginger garlic paste 1/2 tbsp. Garam masala or chicken curry powder to it. Add 2-3 tbsps. Curds to it and 1 tsp. salt. Let it marinate for 1/2 hour.
  3. In the meantime, heat oil in a thick bottomed kadhai / frying pan
  4. Add onions and green chillies and mix well. Add 1 tsp. salt keep in mind VB that salt is already added to chicken in marination
  5. Cook onions till light golden in color then add 1 tbsp. ginger garlic paste and saute till raw smell disappears.
  6. Add de balance red chili powder, coriander powder, turmeric powder to the onions. Saute for a minute.
  7. Then add curds and fry till oil separates.
  8. Add chopped tomatoes and cook it down till oil separates.
  9. Add marinated chicken to the tomato mixture and fry for a couple of minutes or till chicken changes color to white.
  10. Add 1/4 cup water and put lid and cook de chicken. Keep checking and adding water little by little and cooking chicken.
  11. When chicken 90% done add Coconut Milk and rest of the garam masala. Mix well and lower flame to medium and cook till chicken is tender. Add finely chopped coriander leaves and cook for a minute.
  12. Check seasoning / salt.
  13. Let it rest for a couple of minutes
