Ingredients Serving: 4

  1. 1 whole chicken cut into 2 breasts, 2 thighs, 2 drumsticks and 2 wings
  2. Oil to deep fry
  3. 3 egg whites, lightly beaten
  4. 1 cup all-purpose flour
  5. 1 tablespoon brown sugar
  6. 1 tablespoon salt or add according to taste
  7. 1/2 cup oats
  8. 1/2 cup bread crumbs
  9. Spice Mix:
  10. 1 tablespoon paprika
  11. 2 teaspoons onion salt
  12. 1 teaspoon chili powder
  13. 1 teaspoon black pepper
  14. 1/2 teaspoon celery salt
  15. 1/2 teaspoon dried sage
  16. 1/2 teaspoon garlic powder
  17. 1/2 teaspoon ground allspice
  18. 1/2 teaspoon dried oregano
  19. 1/2 teaspoon dried basil
  20. 1/2 teaspoon dried marjoram
  21. Marination-
  22. 2 tsp of Spice mix
  23. Juice of 2 Lemons

Instructions

  1. Mix together all the spices well to make the spice mix.Combine oats and breadcrumbs in a large bowl and season with salt.
  2. Marinate the Chicken with lemon juice and 2 tsp of the spice mix for atleast 1 hour.
  3. Combine the rest of the spice mix with flour, brown sugar, and add salt.
  4. Dip chicken pieces in flour mixture then into egg whites and lastly into oats- breadcrumb mixture.Turn a few times and make sure the oat- breadcrumb mix is really stuck to the chicken. Repeat with all the chicken pieces.
  5. Let chicken pieces rest for 5 minutes so crust has a chance to dry a bit.
  6. Fry chicken in batches. Breasts and wings should take 12-14 minutes and legs and thighs will need a few more minutes.
  7. Let chicken drain on a few paper towels when it comes out.
