ABOUT Achaari Gatte !! in Microwave for Microwave cooking contest . RECIPE

This Achaari Gatte is inspired by my hometown Rajasthan's famous Gatte ki Sabji.Which is traditionally made with yogurt gravy.This dry version is perfect for an appetiser or side dish to be served with phulka/chappati/paratha or along with Rice and Kadhi/any gravy dish.We love eating it alongside Kadhi and Rice:))

Ingredients Serving: 4

  1. Chickpea flour/Besan -1.5 cup
  2. Salt to taste
  3. 1/2 tsp Ajwain/ bishop's weed or carom seeds
  4. 1/2 tsp turmeric/ haldi powder
  5. 1/2 tsp red chilli/paprika powder
  6. 1/8 tsp asafoetida/hing powder.
  7. 1 tbsp cooking Oil
  8. 1 Microwave compatible wide Bowl with water to boil Gatte
  9. Water to knead tight consistency dough .The above all ingredients needed for making dough for rolling out Gatte/ cylindrical rolls as shown in the picture no-2.
  10. For tempering, you will need following ingredients.
  11. 2 tbsp of mustard oil/any cooking oil of your choice.
  12. 1/2 tsp mustard seeds
  13. 1/2 tsp cumin seeds
  14. Salt to taste
  15. 1/2 tsp red chilli powder
  16. 1/2 tsp turmeric powder
  17. 1/2 tsp roasted cumin powder
  18. 1 tbsp white sesame seeds
  19. 1/8 tsp asafoetida/hing
  20. 1/2 tsp Amchur /dry mango powder (optional)
  21. 1 Microwave compatible bowl to do tempering with spices of boiled and chopped gatte.
  22. Spoon/spatula for mixing
  23. Fresh Cilantro/coriander ,Lemon wedges and chillies (optional) for garnishing.

Instructions

  1. Knead tight consistency dough with Besan and spices+ oil by adding water in small quantity and divide into lemon sized small balls.
  2. Using back of the palm, Roll out Gatte/cylindrical rolls.
  3. In a microwave compatible bowl , take about 1 litre of water and heat it up in microwave for 2 minutes,add 1 tbsp of oil and add rolled Gatte one by one.
  4. cover with the lid and boil for 2+2+2 minutes (total 6 minutes) at intervals.In between check whether its cooked or not.I used microwave at 900w on high and it took about 5 minutes with lid and 8 minutes without lid for Gatte to be cooked
  5. Once cooked you can see them floating on the water .
  6. Drain the water and let Gatte cool for about 10 mins.
  7. Cut Gatte into small pieces, as shown in the picture.
  8. in a microwave compatible bowl, take about 2 tbsp mustard oil+ all spices and sesame seeds .Cover with a lid and microwave for 1-2 minutes.Add chopped Gatte and mix well.
  9. Serve in your favourite bowl/tray and garnish with fresh cilantro/coriander and serve with a lemon wedge.
