Ingredients Serving: 2

  1. Basmati rice - 1 cup, washed and soaked
  2. Cinnamon - 1" piece
  3. Star anise - 1
  4. Bay leaf - 2
  5. Cloves - 3-4
  6. Whole cardamom - 2
  7. Raw jackfruit - 1 cup, cut into pieces
  8. Onion - 4, sliced
  9. Garlic - 4 cloves
  10. Ginger - 1/2 " piece
  11. Green chilli - 2
  12. Chilli powder - 1 tsp
  13. Pav bhaji masala - 1 tbsp
  14. Turmeric Powder - 1/4 Tsp
  15. Curd - 1 Tbsp
  16. Oil - 1 tbsp & 1 tsp
  17. Salt

Instructions

  1. Boil the jackfruit pieces till tender. Drain and keep aside.
  2. Boil the rice with the whole spices and some salt, just till half done. Drain and keep aside.
  3. Fry the sliced onions in a tsp of oil till brown. Cool a bit. Keep aside half of the fried onions and grind the rest to a fine paste along with garlic, ginger and green chillies.
  4. Marinate the jackfruit in this paste. Add chilli powder, pav bhaji masala, turmeric and curd. Mix and keep aside, maybe for 30 mins.
  5. Heat the same pan in which onions were fried and add the remaining oil.
  6. Put in the jackfruit along with the masala, add salt and cook for a while till masala looks semi dry, not too dry.
  7. Put the cooked rice on top of the jackfruit masala, sprinkle fried onion cover and cook till rice is cooked completely. Put off flame and mix lightly.
  8. Serve hot.
