ABOUT Jujube/ Indian Plum Tartlets RECIPE

An amazing fusion by me with this awesome tropical fruit, famously called as "Ber" in our Country. It is a quite nutritious and rich in Vitamin C. It is second to guava and is much rich in Vitamin C than citrus fruits.

Ingredients Serving: 5

  1. For the tartlets- all purpose flour 1 cup
  2. Cold butter cut into cubes 1/2 cup
  3. Salt a pinch
  4. Water to make the dough as required
  5. For the filling of jujube pudding you will need jujube fruits 1/2 kg
  6. Sugar 1/2 cup
  7. Fresh cream 100gm
  8. Nutmeg powder 1/4 th tsp
  9. Water around 1 cup to cook the jujube fruits.
  10. Almonds soaked 2 tbsp
  11. Extra cream to garnish

Instructions

  1. Cook the jujube fruits on medium flame for about 10 mins until tender
  2. Meanwhile prepare the dough for the tartlets.
  3. Add the butter in the flour and keep rubbing with hands until it combines well.
  4. Add sufficient water to make a smooth dough and refrigerate it for 30 mins. It is important.
  5. After 30 mins, divide the dough into medium sized balls and make them on the back side of your muffin pan if you don't have tartlet moulds.
  6. Prick them with a fork all over so that they don't puff up.
  7. Bake them in a preheated oven on 180° for about 18 mins.
  8. Keep them aside to cool.
  9. Meanwhile work on your pudding. Blend the cooked jujube along with all the ingredients until smooth and fluffy.
  10. Fill it up in the cooled baked tartlets and top up with a small dollop of fresh cream and sliced jujube fruits.
  11. Serve them chilled. Keep them refrigerated and covered until you are ready to serve.
