ABOUT Christmas Plum Cake RECIPE

A traditional recipe with fruits soaked in rum

Ingredients Serving: 10

  1. All-purpose flour 125 gms
  2. Sugar 125 gms
  3. Butter 80gms
  4. Oil 40 ml
  5. Eggs 3
  6. Baking soda 1/4 tsp
  7. Baking powder 1/2 tsp
  8. salt 1/4 tsp
  9. All spice mix 1 tsp
  10. For Caramel -
  11. 1/4 cup Sugar
  12. 2 tbsp water
  13. 1 cup dry fruits and nuts
  14. Rum required to soak fruits.

Instructions

  1. Soak all the dry fruits a month in advance.
  2. Make the caramel with sugar and water. It should be dark and thick.
  3. Beat butter and sugar till fluffy. Add caramel.
  4. Sift all the dry ingredients.
  5. Add sifted dry ingredients.
  6. Toss soaked fruits and nuts in flour. Fold into the batter.
  7. Preheat oven at 180 degrees C
  8. Pour batter into a greased and lined cake tin
  9. Bake for 35 to 40 minutes or till done.
  10. Cool and slice
