Ingredients Serving: 3

  1. All purpose flour - 2 cups
  2. Ghee (i have used desi ghee)-2 tbsp
  3. salt as per taste
  4. Ajwain - 1 tsp(optional)
  5. For Stuffing- Chopped Onions - 3 medium sized
  6. Grated ginger - 1 tsp
  7. Fennel powder- 1 tsp
  8. Turmeric Powder- 1 tsp
  9. Carom seeds - 1 tsp
  10. Coriander powder - 2 tsp
  11. Red chili powder as per taste
  12. Dry mango powder - 2 tsp
  13. Sugar - 1/2 tsp
  14. salt as per taste
  15. Rasins - 7 to 9 pieces
  16. Cashews (finely chopped)-5 to 7 pieces
  17. Oil or ghee for frying

Instructions

  1. Firstly take a bowl add Apf in it ,add salt and mix it well.
  2. Now add ghee 1 tbsp in it.
  3. Add water gradually in it and start kneading the dough.
  4. Add rest of the ghee and knead a soft dough.
  5. Not too soft neither too hard.
  6. Keep the dough for rest by covering it with a damp cloth and keep it for 30 minutes. For stuffing Take a wok add 1 tsp oil in it.
  7. Now add cumin seeds .
  8. Add chopped cashews and fry them for 1 to 2 minutes.
  9. Add onions and ginger in it.
  10. Now add all the dry masalas turmeric ,salt,coriander powder,mango powder,fennel powder,sugar,red chili powder and mix it well.
  11. When the masala has mixed upproperlyadd raisins in it.
  12. Now turn off the flame and let the masala gets cool down.
  13. Now take the dough and divide it in small balls and make its small chapati like we make for puris. With the help of a roller pin make thin round shape.
  14. Take a wok add oil or ghee whichever you prefer and let it heat up properly.
  15. Now take 1 circle and fill the center with 1 to 2 tsp of onion stuffing and start folding it by taking the edges of the circle.
  16. Now seal the edges like making a potli.
  17. Make more kachoris like this and deep fry them.
  18. Fry them till they turn golden brown and keep them on an absorbent paper.
  19. With the left over dough i have made plain namak para also.
