ABOUT Spicy Baked Corn RECIPE

A vegetarian baked delight for people who gotten bored of having paneer!

Ingredients Serving: 4

  1. Oil - 2 Tbsp
  2. Corn kernels boiled - 3/4 cup
  3. Green Capsicum - 1/2 (chopped)
  4. Red Capsicum - 1/2 (chopped)
  5. Yellow capsicum - 1/2 (chopped)
  6. Onion - 1 (finely chopped large)
  7. chaat masala - 1 to 2 tbsp
  8. Potatoes - 2 (large boiled peeled and grated)
  9. Freshly ground black pepper
  10. Salt to taste
  11. Fresh cream for added flavor (Optional)
  12. Green chillies - 2 (finely chopped)
  13. Butter - 2 Tbsp

Instructions

  1. Heat oil in a non-stick pan add in the finely chopped green, yellow and red capsicums followed by onions, sauté for a minute add in the green chilies, boiled corn kernels and Chaat Masala.
  2. Add butter, mix well and cook for 4 minutes on medium heat. Adding butter at the last stage helps give it a more buttery flavor.
  3. Transfer this to a glass dish.
  4. Mash the potatoes in a bowl, add salt, butter and cream, you can even replace the cream here with milk.
  5. Mix well, remove all lumps. Make sure the texture is soft. Add in the freshly ground pepper.
  6. Put the potato mixture equally over the corn mixture. Level the top, place it in a preheated oven at 200ºC and bake for 20 minutes or till it turns brown.
