Pasta with Tomato Cream sauce & Roasted Vegetables

Ingredients Serving: 2

  1. Mixed Vegetables - 2 cups (Given below)
  2. Broccoli - 1/2 cup
  3. Babycorn - 1/2 cup
  4. Mushroom - 1 cup
  5. Onion - 1 cubed
  6. Garlic - 2 to 3 cloves
  7. pepper to taste
  8. Salt to taste
  9. Italian seasoning to taste
  10. Olive oil - 1 tbsp
  11. Pasta - 1 cup 'al dente'
  12. Butter - 1 tbsp
  13. Marinara sauce - 4 tbsp
  14. Cream - 200 ml
  15. Water - 1 cup
  16. Cheese - 1 cube

Instructions

  1. In a non stick pan add and mix together onion, garlic and the vegetables. Add salt, pepper and Italian seasoning with Olive oil.
  2. Roast the vegetables for 20-25 minutes.
  3. In an another pan add butter and marinara sauce.
  4. Mix well and add cream. Add enough water to make it runny (I used about a cup). Add salt to taste (if required).
  5. Mix in the cooked pasta, roasted vegetables and cheese.
