ABOUT Carrot Rice RECIPE

This is an easy recipe and it tastes good. I use basmati rice, you can use any rice or other cooked millets of choice. The grated carrots look like orange rice and look super pretty. The pre cooked rice mixed with the mixture of spices, ginger garlic paste, fresh carrots and finally the lemon juice.

Ingredients Serving: 3

  1. 1 cup Basmati Rice
  2. 2 carrots peeled and grated or 1 cup grated carrots
  3. 1 onion chopped finely
  4. 1 green chilly
  5. 10 curry leaves
  6. 1 tbsp chopped coriander
  7. 2 cinnamons
  8. 3 cloves
  9. 1 cardamom
  10. 1 bay leaf
  11. few star aniseeds
  12. few kalpasi ( black stone flower )
  13. 3 tsp ginger garlic paste ( 7 garlic and 1 tsp ginger)
  14. 1/4 tsp chilly powder
  15. 1/4 tsp turmeric powder
  16. 1/2 tsp garamasala powder
  17. 1 Lemon
  18. 2 tbsp ghee
  19. 1 tbsp oil
  20. Salt

Instructions

  1. Wash the rice gently and soak for 20 minutes. After 20 minutes, drain the water completely.
  2. Take a pressure cooker and add 1.5 cups of water and the rice. Keep in low and pressure cook for 1 whistle. Allow it to leave the pressure naturally.
  3. In a bowl or plate spread the cooked rice and add a drop of ghee over the rice. Allow them to cool completely.
  4. Heat oil and ghee in a large kadai over medium heat. Add the bay leaf, cinnamon, cloves, kalpasi, star aniseeds and cardamom and let them pop for a few seconds.
  5. Then add the chopped onions, green chilly and curry leaves. Saute them for 3 to 4 minutes and add the ginger garlic paste. Stir it continuously for a few minutes.
  6. When the raw smell of ginger, garlic disappears add the grated carrots and saute them until it reduces in volume. Then add the turmeric powder, chilly powder, garamasala powder, required salt and stir while adding masala powder so that the grated carrots are uniformly cooked.
  7. Now add the rice and stir for few minutes till the masala has coated the rice well. Finally add the lemon juice and coriander leaves mix them gently and pack it for the lunch boxes with a crunchy veg salad.
