Ingredients Serving: 4

  1. 2 cups carrot puree
  2. 1 cup rice
  3. 10 cashew nuts
  4. 2 green cardamom
  5. 2 cloves
  6. 1 piece Cinnamon
  7. 10 Black Peppercorns
  8. Some green coriander leaves for garnishing
  9. 1/2 teaspoon ginger paste
  10. 1/2 teaspoon garlic paste
  11. Salt to taste
  12. Sugar to taste.
  13. 1/2 cup water
  14. 2 tablespoons of ghee
  15. 1/2 teaspoon of haldi powder
  16. 1/2 teaspoon jeera powder

Instructions

  1. Heat ghee on a kadai
  2. Put in the whole spices( cardamom,cloves, cinnamon ,black peppercorns and the cashews.
  3. Add the carrot puree
  4. Stir and cook for five minutes
  5. Add in salt ,sugar,jeera powder and haldi
  6. Cook for five minutes
  7. Add ginger paste and the garlic paste cook.
  8. Add the rice and stir well.
  9. Add water and cover. Cook until the rice is done.
  10. Open the lid and shake up the rice. Add the chopped green coriander.
  11. Serve hot with any curry of your choice. This can be eaten simply with any raita.
