ABOUT Mexican Parantha RECIPE

Chapatis and parantha is an every day part of our food but at times we get bored by eating one type of chapatis or parantha. This time presenting mexican parantha, it is healthy and tasty as well.

Ingredients Serving: 5

  1. 1 and 1/2 cup All Purpose Flour
  2. Water to knead the dough
  3. For the filling:
  4. 1/2 cup grated paneer
  5. 1/2 cup Grated Cheese
  6. 1/2 cup sweet corn (boiled)
  7. 1 chopped capsicum
  8. 1 tsp dry coriander powder
  9. 1/2 tsp red chilli powder
  10. Salt to taste
  11. Oil to shallow fry

Instructions

  1. Mix the salt according to taste in the flour and knead a chapati dough. Keep it aside.
  2. Mix the grated paneer, grated cheese, boiled sweet corn, chopped capsicum, coriander powder, chilli powder and salt. Mix it well. The filling is ready.
  3. Make small balls from dough.
  4. Take a ball and roll it like thick chapati. Now spread oil on it. Keep the filling in the middle of the roti and bind it well from the side.
  5. Now again roll it with a little dry flour.
  6. Cook the parantha on a medium flame using a little oil till both the sides turn golden brown in colour.
  7. Repeat the process with other balls as well.
  8. Serve hot with pickles or chutney.
