Ingredients Serving: 4

  1. 3 potatoes boiled and mashed
  2. Tomato 1 chopped
  3. Onion 1 chopped
  4. Green capsicum 1 chopped
  5. Green chillies 2 chopped
  6. Carrot, Beans and Cauliflower 1/2 cup chopped
  7. Pav Bhaji Masala 2 tsp
  8. Green peas 2 tsp boiled
  9. Ginger-Garlic paste 1 tsp
  10. Butter 25 gm
  11. Oil 50 ml
  12. Salt to taste
  13. Pav 10-12
  14. A handful of coriander leaves, chopped
  15. 6-8 lemon slices, cut into wedges

Instructions

  1. Boil the veggies and mash them well. Keep aside.
  2. Heat oil in a pan, add in the onions and saute till they are light golden in colour, then add in the green chillies, ginger-garlic paste and stir fry for a few minutes. Add in the pav bhaji masala, chopped capsicum and stir fry for half a minute.
  3. Next add in the veggies along with 1/2 cup of water. Bring it to a boil and simmer for 10 minutes till the veggies are completely mashed.
  4. Heat half of the butter in a tawa. Slice the pavs into two each and toast till they are crisp and light brown.
  5. Garnish the bhaji with the chopped coriander leaves.
  6. Serve it hot with the pavs and the remaining chopped onion and lemon wedges.
