Ingredients Serving: 4
1 and 1\2 cup gram flour or besan
2 tbsp semolina (suji)
2 tsp sugar
1 tbsp oil
1 tsp green chilli paste
1 tsp salt
1 tsp ginger
1\4 tsp haldi/ turmeric powder
1 and 1\4 tsp eno fruit salt
1\4 tsp cooking soda
2 tsp lemon juice
1 and 1\4 cup water
For tempering:
1 tbsp oil
1 tsp mustard seeds
2-3 green chillies, slit
1 tbsp lemon juice
3\4 cup water
3 tsp sugar
Chopped Coriander to garnish
Instructions
Sift the besan/ gram flour.
Mix the besan(gram flour), suji, salt, sugar, haldi/turmeric, ginger-green chilli paste, oil and make a smooth batter of thin pouring consistency.
Add soda and eno fruit salt. Mix it well. Do not over beat this. Immediately transfer the batter to a steamer/ steaming pan cover with a lid and cook it for 20 mins.
If cooking in a pressure cooker, do not put any weight/whistle. You are only steaming it. Steam until the fork comes out clean.
To temper, heat oil in a pan, add in the mustard seeds, slit green chillies, sugar and lemon juice and also add water. Let it come to a boil. Turn off the flame and add this to the dhokla.
Let the dhokla rest for 10-20 mins until it absorbs all the water and becomes soft and fluffy.
Serve it hot with a garnish of chopped coriander on top.

My altime favourite. CAN you suggest any natural antacid.
