The poor man's food from Andhra given a new twist by me with the addition of fried egg strips hence making it more yummy and delectable.

Ingredients Serving: 5

  1. Left over rice or fresh about 4 cups
  2. Tamarind pulp about 4 to 5 tbsp
  3. Salt to taste
  4. Dry red chillies about 3 to 4.
  5. Chilli powder a tbsp
  6. Ginger garlic paste a tbsp
  7. Turmeric 1/2 a tsp
  8. Peanuts about 4 tbsp
  9. Bengal gram or chana dal a tbsp
  10. Mustard seeds a tsp
  11. Curry leaves a few
  12. Coriander finely chopped a handful
  13. Cashews roasted about 2 to 3 tbsp
  14. Eggs 3
  15. Onions 2 finely sliced
  16. Oil about 3 tbsp+ 1 tbsp to make the omelette.

Instructions

  1. First of all add the chilli powder turmeric ginger garlic paste and salt to the rice and mix well. Keep aside.Heat the oil. Add the mustard seeds and curry leaves.
  2. After they crackle, add the dry red chillies and onions.
  3. After sauteeing for 2 mins, add the chana dal and the peanuts.
  4. Once they are done, add the tamarind paste or water.
  5. Simmer on medium flame until the raw smell goes.
  6. Now toss in the rice and give it a good mix.
  7. Make an omelette with the eggs and cut into bite size strips.
  8. Garnish with roasted cashews coriander and egg strips.
  9. Serve this splendid rice steaming hot with any dry sabzi or just as it is. Either way it tastes yummy.
