For every occasion there is some dish which we always make but this time for Diwali I made a sweet dish which is not regularly made. Papaya Halwa is a very delicious dish. It has a surprise element of no rawness of the fruit. A must make dish for any occasion.

I will make this
First grate the papaya and blanch it in boiling water for 2minutes.Put on the strainer and leave aside to cool completely.
Heat ghee in a non stick pan. Add the cooled Papaya and fry till a nice aroma comes out. (approximately 5 minutes)
On the side, make a sugar syrup of sugar and water. Add one drop of green color (optional).
when Papaya gets sauted well, then add grated mawa and again sautee for another 5 minutes.
Then add the sugar syrup and mix everything well and keep stirring continuously till all the water dries up and the ghee leaves the sides.
Add the Cardamom powder and mix again. Add rose water too. The combination of Cardamom and rose water enhances the taste.
Transfer to a serving dish and decorate with silvered Almonds.
Serve warm and enjoy
