ABOUT Diwali special Flower shaped 'Champakali' RECIPE

Champakali is a traditional deep fried snack usually made during Diwali. The name refers to the 'bud'shape of the snack. This flower shaped 'Champakali' is a modified version of the traditional snack not only in shape but also in taste. Ginger-garlic-coriander are added to the dough to enhance the taste.If you have had too many sweets during the festivities, this spicy snack is a must for you! Making these Champakalis requires a bit of practice and some patience.

Ingredients Serving: 4

  1. 1 cup maida
  2. 1 cup besan
  3. 3-4 tablespoon hot oil
  4. 1 Tablespoon Ginger-garlic paste
  5. 3 tablespoon chopped fresh coriander leaves
  6. 3 teaspoons green chilli paste (or 2 teaspoon red chilli powder)
  7. 2 teaspoons amchur powder
  8. 2-3 teaspoons crushed kasoori methi
  9. Water as required
  10. Salt to taste
  11. Oil for Deep frying

Instructions

  1. In a mixing bowl add the flours,spices,salt and hot oil
  2. Add water to make a stiff but pliable dough
  3. Heat the oil for deep frying
  4. Pinch off portion of the dough and roll out into a 8-9 inch circle.
  5. Use a 3 inch cookie cutter (or the lid of a steel dabba) to cut out 4 circles from it.
  6. Place 2 circles one over the other. (so that you make 2 stacks)
  7. With a fork, prick holes all over the stacked circles.
  8. Keeping the center intact ,make about 4-5 slits around the edge, with a sharp knife.
  9. Twist the cut portion around itself, to create a flower like shape
  10. Repeat the above procedure till the entire dough is over
  11. Deep fry in batches, on medium heat till the Champakali becomes golden.
  12. Take out using a slotted soon and drain on an absorbent paper.
  13. Cool completely and store in an airtight container
