Indian sweet made with maida and dipped in sugar syrup

Ingredients Serving: 5

  1. Maida - 1 cup + 2 table spoon
  2. Oil - 4 table spoon + 1/4th cup + for frying khaja
  3. Salt - a Pinch
  4. Sugar - 2 cups
  5. Water - 4 to 5 table spoon for dough + for sugar syrup 1/4th cup
  6. Cardamom essence - few drops
  7. Lemon Juice - few drops

Instructions

  1. For khaja dough:
  2. Take 1 cup maida and add a pinch of salt and 4 table spoon of Oil.
  3. Crumble the dough nicely with your fingers.
  4. Now add 4-5 table spoon of water as required to make a soft dough.
  5. Keep the dough covered for 20 minutes at least.
  6. Then divide the dough into 5 parts and roll out each part into very thin chapatis.
  7. Next make a mix of 1/4th cup Oil and 2 table spoon maida (approx) to make a thick paste.
  8. Now layer one chapati and spread some Oil mix on top.
  9. Put the next chapati on top of first one and again spread some Oil mix.
  10. Continue this way till all 5 chapatis are layered.
  11. Now roll this layer of chapatis carefully into a log.
  12. Cut the log at 2 cms distance.
  13. Now roll out each cut part into an elongated shape. Prepare all.
  14. For Sugar syrup :
  15. Take 2 cups of Sugar and 1/4 cup Water and boil for 5-7 minutes till you get one - string consistency.
  16. Add few drops of lemon juice and cardamom essence to the syrup.
  17. Preparing khaja final step:
  18. Fry all the rolled out khaja in medium flame till slight golden brown and puffed up.
  19. Dip the fried khajas into Sugar syrup immediately for 30 seconds.
  20. Take out the khajas from syrup and they are ready to serve.
