Ingredients: Grated bottle gourd 1 cup; Ghee 1 tbs; Cardamom powder 1/2 tsp; Milk 3 cups; Kesar / saffron 1/2 tsp; Rose water 1 tsp; Sugar 4 tbs; Cashew nuts ,raisins ,pistachios ,almond 10 nos each; Rabdi 1/2 cup; Condensed milk 2 tbs; Sugar for caramelizing; Gee for frying; Bread slices 6 (cut sides )

Grated bottle gourd 1 cup
Ghee 1 tbs
Cardamom powder 1/2 tsp
Milk 3 cups
Kesar / saffron 1/2 tsp
Rose water 1 tsp
Sugar 4 tbs
Cashew nuts ,raisins ,pistachios ,almond 10 nos each
Rabdi 1/2 cup
Condensed milk 2 tbs
Sugar for caramelizing
Gee for frying
Bread slices 6 (cut sides )

Instructions

To make halwa, heat milk in a non stick pan & cook till reduced around to cups.
Heat ghee in another pan ,add bottle gourd and saute for 7 minutes.
Add reduced milk and condensed milk in cook ,stirring constantly, till all the liquid has evaporated.
Add sugar to taste and cardamom powder.
Mix thoroughly .
Add cashew nuts ,raisins ,pistachios mix well.
Heat sufficient ghee in a kadai and deep fry the breads till golden brown and crisp.
Drain on obsorbent paper and set aside.
Heat milk in a non stick pan .
Add rose water , sugar and saffron and cook till the sugar melts .
Dip the fried breads in the milk mixture and transfer on a plate.
To make garnish , heat sugar in a non stick pan.
Lower the heat and cook till the sugar turns golden brown.
Dip the tip of each almond and pull to get a string .
Set a side on a silicone sheet.
Place a bread on a serving plate and top with a portion of bottle gourd halwa and roll it .
Garnish with rabdi and caramelized almond serve immediately.
Lauki chum chum is ready.
