Ingredients Serving: 3

  1. Eggs - 6 boiled and peeled
  2. For Masala 1 :
  3. Green chillies - 4
  4. Ginger - 1" piece
  5. Garlic - 6-7 cloves
  6. Coriander leaves - handful
  7. For Masala 2 :
  8. Coconut - 1 cup grated
  9. Coriander seeds - 1/2 tsp
  10. Cumin seeds - 1/2 tsp
  11. Fennel Seeds - 1/4 tsp
  12. Fenugreek seeds - 1/4 tsp
  13. Poppy seeds - 1/4 tsp
  14. Peppercorns - 8-9
  15. Cinnamon - 1/2" piece
  16. cardamom - 1
  17. Star anise - 3-4 petals
  18. Stone flower - 1
  19. Cloves - 4-5
  20. Mace - 3-4 strands
  21. Bay leaf - 1
  22. Dry red chillies - 7-8
  23. Turmeric - 1/4 tsp
  24. Tamarind - 1 lemon sized ball
  25. Onions - 2
  26. oil

Instructions

  1. Slice half an onion and chop the rest.
  2. Make the first masala paste and apply to the boiled eggs. Cut eggs into halves or make tiny incisions if keeping whole.
  3. You can fry the eggs lightly in a pan with little oil. This step is optional.
  4. Heat a pan. Dry roast all the whole spices and keep aside. Then dry roast the coconut till brown. Fry the sliced onion. Keep all aside for cooling. Then grind all together along with tamarind, turmeric and water to make a paste.
  5. Heat oil in a pan, add the chopped onions and fry till slightly brown.
  6. Add the coconut paste and cook till the raw smell goes and curry starts boiling.
  7. Add in the eggs and cook for 4-5 mins.
  8. Serve with roti or pav.
