Ingredients Serving: 3

  1. 1 Packet of Crushed Oats
  2. 2 Tbsp Of Semolina
  3. 2 Tbsp of Gram Flour
  4. 1 Cup of Curd
  5. 1 small cup of water
  6. 1 cup finely chopped spinach
  7. 1 Cup Finely chopped Cabbage
  8. 1/2 cup boiled sweet corn
  9. 1/2 cup boiled green peas
  10. 1 potato finely chopped
  11. 2 Tsp of Ginger and chilli paste
  12. 1 tsp of chilli flakes
  13. 1 tsp of oregano
  14. 1 tsp of black pepper powder
  15. Pinch of turmeric powder
  16. 1 Tbsp of Olive oil
  17. 1 Spoon full of Eno
  18. salt as per taste
  19. Cheese (Optional)

Instructions

  1. Preheat oven to 425 degrees F (220 degrees C). Grease muffin cups or line with paper muffin liners.
  2. Take a big mixing bowl, add crushed oats, semolina and gram flour. Mix it well. Add all the vegetables and combine it.
  3. Now add 1 Cup of curd, Olive Oil, water and all the spices and keep mixing it. Batter should be semi thick.
  4. Keep batter for resting for 10 mins.
  5. Now add 1 tbsp of water and mix well. Now add 1 spoon full of Eno and stir it continuously.
  6. Now pour the batter in your muffins tray. Even you can add cheese in between your muffins.
  7. Bake your muffins in preheated oven for 20 to 25 minutes, until a toothpick inserted into the center of a muffin comes out clean.
  8. Serve your Oats muffins with ketchup or salsa.
