ABOUT Mixed Veggies (Labra Tarkaari, just amazing) RECIPE

It is a Festive dish from West Bengal made with Khichuri as a Bhog (Prashad). This dish is made with Assortments of Seasonal vegetables.

Ingredients Serving: 4

  1. Pumpkin 250 to 300 grms
  2. Brinjals 200 grms
  3. Sweet Potato 200 grms
  4. Raw Banana 200 grms
  5. Carrot 200 grms
  6. Beans 200 grms
  7. Potatoes 200 grms
  8. Coriander seeds 1 tbsp
  9. cumin seeds 1 tbsp
  10. Red chilli 4 no.or red chilli powder 1 tsp
  11. Turmeric powder 1/2 tsp
  12. Mustard oil 3 tbsp
  13. Ghee 2 Tbsp
  14. For pancha phoran:
  15. Mustard seeds 1 1/2 tsp
  16. Cumin seeds 1 1/2 tsp
  17. Fennel seeds 1 1/2 tsp
  18. Fenugreek seeds 1 1/2 tsp
  19. Kalonji 1 1/2 tsp
  20. Sugar 3 tsp
  21. Coriander leaves for garnish
  22. Bay leaves few
  23. Kari patta few

Instructions

  1. Dry grind masala for pancha phoran.
  2. Wash and cut the vegetables.
  3. Heat oil in a pan, add grated ginger, saute for a minute. Add Panchal Phoran masala. Saute for 1 minute. Add chopped vegetables one by one according to the time they take for cooking.
  4. Saute for 5 minutes. Add salt and turmeric and cover with a lid and let it cook for 15 minutes. If veggies dry up, sprinkle water in between.
  5. Now add ground coriander and Cumin powder. Add Bay leaves and Curry patta. Add chilli powder according to taste.
  6. After veggies are cooked add sugar and Ghee and serve with coriander leaves garnish.
