ABOUT Instant vegetable rice RECIPE

An easy to prepare yet delicious, aromatic and filling vegetable rice. Nice brunch option, prepared it in my own way.

Ingredients Serving: 5

  1. Basmati rice 1 cup
  2. Hot water 2 cups
  3. Bay leaves 2
  4. Clove 4
  5. Garlic Cloves 5
  6. Green chillies 4
  7. Cardamom 4
  8. Nutmeg 1
  9. Onions 2 thinly sliced
  10. Onion 1 thinly sliced, for garnishing.
  11. Carrot 1 big, finely chopped
  12. Soya granules 1/4 cup
  13. Salt to taste
  14. Curd 1 tsp
  15. Garam masala 1/2 tsp
  16. Coriander leaves for garnishing.

Instructions

  1. Wash and soak basmati rice in water for 30 minutes.
  2. Wash and soak soya granules in warm water for 20 minutes with little salt.
  3. Take a cooker. Add ghee and oil. Fry bay leaves, cardamom, nutmeg, clove. Then add onions, green chillies and garlic and fry till golden brown.
  4. Now squeeze the soya granules to remove excess water and add it to the cooker. Add chopped carrots. Fry well.
  5. Now add garam masala and fry.
  6. Add drained rice and mix well. Then add curd.
  7. Add hot water just 1 inch above the level of rice.
  8. Close the lid and pressure cook for 3 whistles on a high flame.
  9. Once the cooker is cooled. Transfer the rice to serving bowl. Garnish with coriander leaves and ghee roasted onions.
