Dry roast the special masala ingredients and powder them
In a large bowl ,pour in yoghourt,powdered specialmasala ,turmeric,degi mirch, Salt ,whisk it so that no lumps remain,now add water and mix
Heat oil in a pan, add methi seeds , when they turn brown take out the seeds as they taste bitter.
Add to oil hing,curry leaves,green chillies and Besan batter ,bring to boil then cook at low heat stirring occasionally till done
FOR PAKODHAS
In a bowl mix together,besan ,salt, turmeric, ginger, yoghourt green chillies,ajwain, onions , anardana,coriander powder ,oil , adjust the consistency by adding water( if baking ,keep batter little hard)
Can deep fry the pakodas as well bake them at 180° C,pre- heated oven for 20 minutes
When pakodas are done and curry is also ready then put in the pakodas to curry,add methi leaves and cook for 5-8 minutes at high heat
