ABOUT Coconut Avocado icecream RECIPE

Tropical fruits are my second best favorite when it comes to ice creams after chocolate. Jack fruits, custard apples, tender coconuts, mangoes to name some few. Creamy, rich, melt in the mouth and the flavor lingers back. I have attempted to make a very rustic Coconut avocado ice cream. Nothing fancy and it is super simple to make but tastes just out of the world.

Ingredients Serving: 6

  1. 2 ripe avocados pureed approximately 450 grams
  2. 400 grams good quality coconut cream ( home made or canned)
  3. 1/2 cup heavy cream
  4. A good pinch of salt
  5. 3/4 cup sugar (Here you can add more or less depending on how sweet you prefer your ice cream)
  6. Lime juice from 2 medium lemons (Here again add more or less)
  7. Toasted coconut for garnishing

Instructions

  1. Blend everything to a smooth paste and pour into your ice cream container and leave in the freezer.
  2. If you have a churner you can use that or else in intervals take the ice cream out and agitate it by whisking so that in the end you get a good creamy texture.
