ABOUT Dudhi ka Halwa (lauki ka halwa) RECIPE

Very tasty, healthy and a rage in desserts at our Kokani muslim community Eid festivity.Simmering in coconut milk and sweetened asap with raisins and almonds added into making it too. A must with kokanis for Eid.

Ingredients Serving: 3

  1. 1 kg fresh lauki light and fleshy
  2. 1 1/2 cup Sugar
  3. 1/2 cup pure ghee (gowardhan ghee I used)
  4. 5-6 Green Cardomom seeds
  5. 1/2cup blanched almonds
  6. Few raisins
  7. 1 cup pure thick coconut milk (Kara I used )
  8. 1 cup Mawa (khoya)

Instructions

  1. Peel the Lauki /dudhi, wash and grate medium fine.
  2. Heat ghee in a deep non stick pan and add in the cardamom seeds, let it splutter.
  3. Now add grated lauki/dudhi (with its water that oozes while grated). Let this cook for ten minutes as it softens and is half done, add the coconut milk.
  4. Now cook and roast well and add the sugar.
  5. Add the blanched and chopped almonds and raisins.
  6. Mix well and leave the halva on low, keeping a griddle under the pan and on a high flame.
  7. Once sugar is absorbed well, a glazed look is seen, take off the stove and garnish with almonds and khoya crumble. Serve hot.
