ABOUT Medu wada with grated coconut RECIPE

What make this dish unique is addition of coconut flavour to it. It gives become soft, fluffy and light to eat.

Ingredients Serving: 4

  1. 2 cups of urad dal
  2. 1 cup of scrapped coconut
  3. 1 tsp jeera
  4. 1 to 2 sprigs of kadipatta
  5. 1 green chilli
  6. 1 tsp Grated Ginger
  7. 2 spoons finely chopped coriander
  8. Salt to taste
  9. Oil for Deep frying
  10. Water if required to make the batter

Instructions

  1. Soak the urad dal for 5 hours or overnight.
  2. Grind the soaked dal along with scrapped coconut to a smooth batter with little water if required.
  3. If batter become too watery, then quickly add rawa (semolina) to it
  4. Add chopped coriander, grated ginger, green chilli, jeera, kadipatta and salt to it and mix well
  5. Heat oil and gently make vadas & gently slid the vadas in to the oil
  6. Oil should not be very hot else it will just brown color to it and will not be cooked from inside
  7. Vadas should be fried on medium flame so that it get cooked from inside as well as outside
  8. Fry all the medu vadas this way till they become evenly browned and crispy
  9. Drain medu vadas on kitchen tissue to remove excess oil
  10. Serve the medu vadas with warm sambar and coconut chutney.
