ABOUT Shanghai Paneer RECIPE

Spicy, tangy paneer chunks in chinese style. Inspired by the starter I ate with my kids at a chinese restaurant.

Ingredients Serving: 4

  1. For Marination:
  2. 1/2 tsp ginger garlic paste
  3. 300 gms paneer, cubes
  4. 1/4 tsp pepper powder
  5. 1/4 tsp red chilli powder
  6. Salt to taste
  7. For the gravy:
  8. 3 medium sized spring onion bulbs, finely chopped
  9. 2 tbsp spring onion greens, finely chopped
  10. 1 tsp finely chopped coriander leaves
  11. 1 1/2 tbsp finely minced garlic
  12. 3/4 tbsp finely minced ginger
  13. 1 deseeded green chilli, finely chopped
  14. 3/4 tsp soya sauce
  15. 1 tbsp thai sweet chilli sauce
  16. 3/4 tbsp tomato paste/ sauce
  17. 2 tbsp schezwan sauce
  18. Salt to taste
  19. A pinch of black pepper powder
  20. 1 tbsp corn flour
  21. 2 tbsp all purpose flour / maida
  22. 2 tbsp corn slurry
  23. 2 tbsp oil
  24. Oil for frying paneer

Instructions

  1. Marinate paneer cubes with ginger garlic paste, salt to taste, red chilly powder, pepper powder and keep aside for 10 minutes.
  2. After 10 minutes, put corn flour and gently toss it till well coated.
  3. Add all purpose flour and toss gently. Dust off excess flour.
  4. Heat oil on a medium flame and shallow fry till golden brown.
  5. Drain on kitchen paper and set aside.
  6. Heat 2 tbsp oil in a heavy bottomed wok/ kadhai.
  7. Add onions and fry on high heat till it becomes slightly soft.
  8. Add finely minced ginger, garlic and green chillies. Saute till raw smell disappears.
  9. Add thai sweet chili sauce, tomato paste/ sauce, soy sauce, schezwan sauce, pepper powder and stir well.
  10. Check seasoning and salt. Let it cook for a minute then add 1/4 cup water and bring the mixture to a boil.
  11. Add 1/2 tbsp corn slurry and cook till a thick mixture forms.
  12. Add fried paneer, spring onion greens and coriander leaves. Toss till the paneer cubes are evenly coated with the mixture.
  13. Serve hot with your choice of fried rice or noodles.
