ABOUT Date Cake (Eggless) RECIPE

Date Cake has the sweetness of dates and the sweetness of love. Our Anglo- Indian teacher who is also our family friend was fond of baking. She lived in a beautiful cottage in Jeolikote and loved to treat her friends with cakes. Once when we visited her, she baked a date cake for us. Date cake is a very soft cake with a unique flavour and the sweetness of dates.

Ingredients Serving: 8

  1. 1/2 cup all purpose flour
  2. 1/2 cup whole wheat flour
  3. 1 teaspoon baking soda
  4. 1/4 cup almond meal
  5. 30 dates, pitted and washed
  6. 1 cup warm milk
  7. 1/3 cup olive oil
  8. 1 teaspoon vanilla extract
  9. 1/4 cup walnuts, toasted and chopped

Instructions

  1. Preheat the oven to 180 degrees celsius. Grease one 6 inch round cake pan or a medium-sized bundt pan.
  2. Soak the dates in warm milk for about 3 hours. (The dates should absorb milk and swell up.)
  3. Make a puree of the dates. Add oil into the mixture, then add vanilla essence and mix it well to get a uniform mixture.
  4. Whisk together the all purpose flour, whole wheat flour and baking soda. Keep it aside.
  5. Add the dry ingredients to the wet ingredients. Mix till it's incorporated well. Do not overmix. Add the almond meal and give it a good stir. Then fold in the toasted walnuts.
  6. Pour it into the prepared tin and bake for about 35 minutes or till a tooth pick inserted in the center comes out clean.
  7. Then remove it from the oven, after 5 minutes remove it from the pan. Let it cool in the rack.

What is almond meal? Can we skip it?

Hi Namita, I plan to bake this one very soon.. but if I don't have almond meal then what should I add??
