Ingredients Serving: 6

  1. Cucumber - 3
  2. Carrot - 1
  3. Fresh coconut grated - 3 tsp
  4. Pomegranate seeds - 3 tsp
  5. Thick curd - 3 tsp
  6. Red chilli powder - 1/2 tsp
  7. Pepper powder - 1 pinch
  8. Chaat powder - 1 pinch
  9. Salt as per taste
  10. Lemon juice 2 tsp

Instructions

  1. Remove cucumber and carrot skin, remove pomegranate seeds and keep it aside.
  2. Finely chop cucumber, grate carrot, coconut and take it into bowl.
  3. Now add red chilli powder, salt, pepper and chaat powder, 11/2 tsp of pomegranate seeds, squeeze lemon juice and mix everything well.
  4. Now cut cucumber into rounds, and pipes (1 inch).
  5. Add fresh thick curd to the salad and mix well.
  6. Keep cucumber pipes on cucumber discs and fill salad in it. And garnish it with pomegranate seeds.
  7. Instead of filling salad in pipes you can also spread it on cucumber discs.
  8. That's it super cool and healthy cucumber discs and pipes are ready to serve.
