ABOUT Curd Rice RECIPE

Curd Rice is an iconic summer dish. Widely made in summers. It is good for digestion. I am using leftover rice for this recipe. Or you can make it using freshly cooked hot steamed rice.

Ingredients Serving: 2

  1. 1 cup cooked rice
  2. 1/2 cup Curd/Yoghurt
  3. 1/4 cup milk
  4. 1/2 Tsp salt
  5. 1 Tbsp Ghee/Oil
  6. 1 Tsp Chana Dal
  7. 1 Tsp Urad Dal
  8. 5-6 curry leaves
  9. 1/4 Tsp mustard seeds
  10. 1/2 Tsp cumin
  11. 1/4 tsp asafetida
  12. 1/8 Tsp fenugreek seeds
  13. 1 green chilli, chopped
  14. 1/8 tsp Turmeric

Instructions

  1. Heat ghee in a pan. Add mustard seeds and cumin to it.
  2. Once it splutters, add chana dal, urad dal, curry leaves, cashews, green chilli, Fenugreeks seeds. Fry it for a minute on a flame, until the dal becomes slight pink in colour.
  3. Now add turmeric and rice. Saute it. Add salt to it. Mix everything well and remove it from the flame.
  4. Now add the curd and milk. Incorporate everything well.
  5. Garnish it with coriander and serve it.
  6. It is said to be the best cooler for the stomach during summers.
