ABOUT Makai Halwa (Sweet Corn Pudding) RECIPE

The taste and texture of this halwa is almost like moong dal ka halwa. I saw this recipe in a television cooking show.

Ingredients Serving: 4

  1. 3-4 tbsp ghee (clarified butter)
  2. 4 sweet corn cobs/ 1 and 1/4 cup grated corn
  3. 1 and 1/2 cup milk
  4. 1/2 cup sugar
  5. 10-12 Almonds, blanched & chopped
  6. 2 Green cardamoms
  7. 7-8 Saffron threads

Instructions

  1. Remove the outer skin and the fibres of the corn. Then grate the corns and keep it aside.
  2. Remove the skin of the green cardamoms and grind them in the mortar. Remove the skin and thinly slice the almonds.
  3. Heat the ghee in a non-stick wok on a low heat. Add the grated sweet corn and cook until it changes color and a nice aroma develops (this takes about 15 minutes).
  4. After 15 minutes of frying, pour in the lukewarm milk. Now add saffron (dissolved in milk) and the ground cardamoms.
  5. Cook until the liquid has evaporated (this takes about 8-10 minutes). After this, add the sugar and sliced almonds, mix it well together. Let the halwa cook until the sugar is completely dissolved and the liquid has evaporated (this will take about 2-4 minutes).
  6. Garnish with the remaining sliced almonds. Serve the halwa hot.
