Ingredients: lady's finger 500 gram ( wash and wipe with tissue papers); chopped onion 1( big); chopped tomatoes one( big); Chopped ginger 1 teaspoon; Red chilli powder 1 teaspoon; Turmeric powder half teaspoon; Coriander powder 1 teaspoon; Curd 3 tablespoons; besan (Bengal gram flour) 1 tablespoon; for pickle spices---- cumin 1 tea spoon; Carom seeds 1 teaspoon; fenugreek seeds one teaspoon; black mustard 1 teaspoon; fennel seeds 1 teaspoon; Nigella seeds 1 teaspoon; Dried red chilli 2; Mustard Oil as required; salt as per taste; Coriander leaves for garnishing

lady's finger 500 gram ( wash and wipe with tissue papers)
chopped onion 1( big)
chopped tomatoes one( big)

Red chilli powder 1 teaspoon
Turmeric powder half teaspoon
Coriander powder 1 teaspoon
Curd 3 tablespoons
besan (Bengal gram flour) 1 tablespoon
for pickle spices---- cumin 1 tea spoon
Carom seeds 1 teaspoon
fenugreek seeds one teaspoon
black mustard 1 teaspoon
fennel seeds 1 teaspoon
Nigella seeds 1 teaspoon
Dried red chilli 2
Mustard Oil as required
salt as per taste
Coriander leaves for garnishing

Instructions

first of all, dry roast all the pickle spices
make it cool and grind it into a fine powder
now cut the lady's finger into medium pieces
now heat the oil in a wok and fry the lady's finger for 2 minutes in medium flame , sprinkle some salt on it (do not put the lid)
keep aside
again heat the wok with required amount of oil and add onions
fry the onion till translucent, then add Ginger and fry for 1 minute
now add tomatoes and salt to it
when the tomato become soft, add coriander powder, turmeric powder, red chilli powder and 2 tablespoons of pickle masala and combine well
Whisk the curd and the besan in a separate bowl
add this mixture into the masala
Cook the masala very well (till the oil come out in the surface)
now add the fried lady's finger to it and combine well
cover the lid and cook for 5 to 6 minute, add salt if required
turn off the gas and Sprinkle some coriander leaves
serve hot with Roti ,paratha or rice
