ABOUT Rajasthani Laal maans RECIPE

This is a Rajasthani fiery meet curry cooked in a variety of masalas and with a burst of red chillies.

Ingredients Serving: 3

  1. Mutton 700grms
  2. Dry red kashmiri chillies 7nos
  3. Gin.garlic paste 2 tbsp
  4. Yogurt 1/2 cup
  5. Cumin.powder 2 tsp
  6. Coriander powder 2 tsp
  7. Turmeric powder 1/4 tsp
  8. Garam masala 1 tsp
  9. Ghee 3 tbsp
  10. Coriander leaves to garnish
  11. Salt to taste
  12. Cloves 3+4
  13. Cinnamin 1
  14. Cardamon 4
  15. Black cardamon 1
  16. Chopped onion 4

Instructions

  1. Soak the chillies in hot water and grind it
  2. Add the ground paste to mutton
  3. Now add 1/2 portion gin.garlic paste and spice powders except garam masala
  4. Add the yogurt and salt and mix well refregirate around 1 hour
  5. In a pan,add 2 tbsp ghee.add 4cloves cinnamon cardamon (black n green)and fry
  6. Then add the chopped onions and fry well.add the remaining gin.garlic paste and cook till raw smell goes
  7. Add the marinated mutton and cook on high heat for 5 mins
  8. Add 1 cup water andCover and cook for atleat 30 mins until meat is tender
  9. After meat is cooked add garam masala powder
  10. In another pan add 1 tbsp ghee and add 3 cloves and dry red chillies and add it to the cooked curry
  11. Garnish with coriander leaves and serve hot with chapathi or rice
