Rajasthani Laal Maas is a spicy royal treat of Rajasthan. This recipe uses lots of red chili. Fragrant spicy chunks of mutton cooked in ghee and flavoured with charcoal...That is the trademark of Rajasthani Laal Maas.
It seems awesome.
Soak red chili and make a paste of it.
Combine mutton, yogurt, powdered masala, 1 tea spoon ginger-garlic paste, red chili paste.
Keep in refrezerator for one hour or more for better taste and flavour.
Heat ghee in a non-stick pan.
Add whole masalas.
Add the onion and saute till light brown.
Now add remaining ginger-garlic paste.
Add marinated mutton and saute for 5-7 minutes.
Add salt and water and cook 7-8 whistles.
Meanwhile light the piece of charcoal and place it in a small metal bowl.
Place the bowl in the centre of cooker.
Add 3 cloves and ghee and cover for 2 minutes.
Add garam masala and serve hot with Rajasthani Missi Roti or steamed rice.
