Ingredients Serving: 3

  1. For pakora:
  2. Chopped spinach 1 cup
  3. Onion 1 medium , chopped
  4. Garlic 1/2 tsp, finely chopped
  5. Ginger 1/2 tsp, finely chopped
  6. Gramflour 1 cup
  7. Cumin powder 1/2 tsp, roasted and coarsely ground
  8. Red chilli powder 1/2 tsp
  9. Coriander seeds 1/2 tsp
  10. Carom seeds 1/4 tsp
  11. Salt 1/2 tsp or as per taste
  12. Asafoetida 1/4 Tsp
  13. Water less than 1/4 cup or as per requirement
  14. Oil 1 tbsp
  15. For kadhi:
  16. Gramflour 1 cup, slightly roasted
  17. Yougurt 2½ cups
  18. Red chilli powder 1 tsp
  19. Turmeric powder 1 tsp
  20. Salt 1½ tsp or as per taste
  21. Water 5-6 cups
  22. Clarified butter/ghee 1 tbsp
  23. Dry red chilli 2
  24. Asafoetida 1/4 Tsp
  25. Mustard seed 1 tsp
  26. Fenugreek seeds 1/4 tsp
  27. Cumin seeds 1 tsp
  28. For Tempering:
  29. Clarified butter/ghee 1 tbsp
  30. Cumin seeds 1/2 tsp
  31. Red chilli powder 1/2 tsp

Instructions

  1. For pakoras; in a bowl put all the ingredients for pakoras, except oil.
  2. Mix it properly , prepare a homogeneous mixture, the mixture should stick into balls with your hands,let the mixture sit for couple of minutes.
  3. Preheat the oven to 220°C for 15 minutes ,lined a baking tray with butter paper,brush oil on it.
  4. Using a icecream scoop, place scoops on lined baking tray, keep them small,give some space in between ,brush oil on the pakoras.
  5. Put it in the oven.
  6. Bake it at 220°C for 20-25 minutes or until golden brown.
  7. For kadhi; meanwhile prepare besan mixture first,in a bowl add gramflour,red chilli powder, turmeric powder, yougurt ,salt,water,mix them well, keep aside.
  8. Heat pan on medium flame ,add ghee, Fenugreek seeds, cumin seeds,dry red chilli, mustard seeds,asafoetida,let it sputter .
  9. Now add the besan mixture, let it cook for 8-9 minutes or till it thicken in consistency, stir it continuously,
  10. Add pakoras and cook it for a minute.
  11. For tempering,take a small pan,add ghee , cumin seeds in medium flame,let it sputter,add red chilli Powder.
  12. Immediately add the mix on the kadhi.
  13. Serve hot with steamed basmati rice, enjoy.
