Nankhatai is usually prepared in oven and comes out really tempting. But nankhatai can also be prepared on a gas stove in a wok that has a heavy base or a pressure cooker. It has a pleasant taste!

Ingredients Serving: 4

  1. All purpose flour 1 cup
  2. Powdered sugar 1 cup
  3. Desi ghee or Vegetable oil 1/2 cup
  4. Baking powder 1/2 teaspoon
  5. Green cardamoms 4-5
  6. Tooti frooti 1 tablespoon

Instructions

  1. Peel and grind the green cardamoms.
  2. Mix the all purpose flour and sugar. Now add in the baking powder and cardamom powder and mix all the ingredients thoroughly. Now add in melted ghee (melted at room temperature) into the mixture and with mix until you get soft dough. (Keep aside 2-3 tsp of ghee.)
  3. Take a utensil with heavy and plain base and add in 300-400 grams of salt. Spread it evenly all around and place a wire or net stand in the utensil. Cover the utensil and allow it to get warm in a low flame.
  4. Meanwhile prepare the nankhatai and place them on a plate. Grease the plate with some ghee.
  5. Take some amount of dough and roll it into a round shape. Now flatten the ball by pressing it gently with your palms. Put in 3-4 pieces of trooti frooti in the center of the nankhatai, place this on a plate and likewise prepare all the nankhatais. Keep the nankhatai at some distance on a plate. Now place the plate or tray on the wire stand kept inside the utensil. Then cover the utensil properly.
  6. Bake the nankhatai for 15 minutes on a low flame. Check after 15 minutes, if it has got puffy and brown from the surface, this means it has been baked appropriately. If it is still uncooked then bake it for 3-4 more minutes on a low flame.
  7. When the nankhatais get cooled, separate it from the tray and place it in some other bowl or plate. Mouthwatering and delectable nankhatais are ready! (When it gets cooled completely, store them in an airtight container and it will last upto 1 month.)
