ABOUT Cezerye RECIPE

It is famous dish of southern Turkey.Is is caramalised carrot paste delight with nuts.

Ingredients Serving: 10

  1. Carrot 400 gm
  2. Sugar 1 cup
  3. Chopped nuts 50 gm
  4. Coconut flakes 50 gm
  5. Water 1 cup
  6. Salt a pinch

Instructions

  1. Wash carrot,peel and grate it.
  2. Place the grated carrot and 1/2 cup water and sugar in a heavy wide pan.
  3. Cook over medium heat for 30 min.or till all liquid evaporates.
  4. Again add half cup of water and again heat for about 30 min or till all liquid evaporates.
  5. At this sugar starts caramelizing ...so mash cooked carrots into chunky paste
  6. Again heat for 5-10 min and add nuts u want ..I added walnuts,almonds and cashews.mix it well.
  7. Grease a rectangular pot with spoon of ghee or spread parchment paper .
  8. Pour whole mixture in pot...spread it...
  9. Kept it in fridge for about 2 hours
  10. Either take wet knife and cut into small squares or make round shaped ball
  11. Spread dessicated coconut in a plate....roll carrot balls in coconut plate ...coat all balls like this ..
  12. Cezerye is ready
  13. Can store it for 7 days
