ABOUT SHAKSHUKA RECIPE

Shakshuka is a dish of eggs poached in a sauce of tomatoes. It is usually served for breakfast, though i think it's perfect for brunch on lazy weekends. This dish is best served right away after cooking alongside some crusty bread or pita. An easy and flavourful recipe. Do give it a try!

Ingredients Serving: 3

  1. 1. Tomatoes  -  4 big
  2. 2. Onion  - 1 medium chopped
  3. 3. Capsicum  -  1/2 medium chopped (green or red)
  4. 4. Garlic cloves  - 2 minced
  5. 5. Red chilli powder  -  2 tspn
  6. 6. Cumin powder  - 1 tspn
  7.   7. Oregano - 1/2 tspn (You can also use thyme)
  8. 8. Egg  - 3 or 4
  9. 9. Oil - 1 tbspn + drizzling
  10. 10. Pepper powder
  11. 11. Some chopped parsley leaves or coriander leaves

Instructions

  1. Blend tomatoes in a blender. Do not add water.
  2. Strain the tomato puree in order to get rid seeds and skin. Strain it well and keep aside.
  3. Heat oil in a pan, add chopped onions, capsicum and minced garlic. Mix and saute them well.
  4. Once onions become soft, add the strained tomato puree. Mix well.
  5. Add red chilli powder, cumin powder, oregano and salt.
  6. Allow it to cook for 10 - 15 minutes on low flame.
  7. After 10 - 15 minutes, the consistency of the puree begins to reduce. Taste it and adjust the seasoning to your liking.
  8. Using a spoon, make 3 or 4 well in the tomato mix (picture 1).
  9. Gently break an egg into each wells (picture 2 - 4).
  10. Sprinkle some oil. Cover and cook for a minutes.
  11. Open it and sprinkle pepper powder and parsley leaves over it. Serve hot!
