Idiyappam is a traditional Tamil Nadu breakfast made from rice flour mainly for 6 month old babies.
Awesome receipe
In a bowl take the water, add a tsp of oil allow it to boil for 2-3 minutes.
In a vessel, keep the flour mixed with salt, add in the boiled water little by little to the flour and mix well with a ladle, do not pour all the water you may get some excess water remaining.
When the dough becomes warm start kneading with your hands and you will be able to roll a non- sticky and soft yet firm dough.
Now take the idiyappam press, grease it with oil and fill in the dough, squeeze it onto the idli plate.
You can use cooker also keep cooker base plate to make a single layered idiyappam.
It will take 2-3 minutes to cook.
Serve hot with coconut milk or milk with sugar.

In Mangalore we will callit SHEVYO nad have it soaked in chicken cocinut juice curry n its made when the family reunio day. Yummmy dish. We hv a bigger press for that.

There is a curry with coconut milk that goes well with idiyappam. one or 2 onions,1 tomato,3 green chillies,a small piece of ginger. cook evetything in 2nd coconut milk,adding turmeric powder & salt. when well cooked ,add 1stcoconut milk. take 1 1/2 cups of milk each. remove from fire when it s semi thick. the add 1/ 2 lemon juice,coconut oil,& curry leaves. very goid curry for idiyappam. coconut milk u can add more if u want. & 1 small potsyo,to make curty thicker. it should nt b too thick. a bit thinner.
