Ingredients Serving: 8

  1. 310g Flour
  2. 200g white sugar
  3. 200g brown sugar
  4. 1 tablespoon vanilla extract
  5. 4 eggs at room temperature
  6. 3 cups grated carrots
  7. 1 teaspoon salt
  8. 2 teaspoons ground cinnamon
  9. 1 1/2 teaspoon baking soda
  10. 1 teaspoon baking powder
  11. 235ml oil
  12. 110g unsalted butter , melted
  13. 120 g chopped walnuts - optional
  14. 1/2 teaspoon nutmeg
  15. For Frosting
  16. 220g creamcheese at room temperature
  17. 450g powdered sugar
  18. 110 g soft unsalted butter
  19. 1 teaspoon vanilla extract
  20. 1/4 teaspoon salt

Instructions

  1. Preheat oven to 170 and prepare two 8-inch pans with parchment paper
  2. In a large bowl, whisk together flour, sugars, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Add oil and melted butter and blend well
  4. Add eggs, one at a time and blend well for 30 sec after adding each one
  5. Add vanilla extract and blend well
  6. Add carrots and nuts (optional), mix well
  7. Evenly divide carrot cake batter into prepared baking pans and bake for 30-40 minutes until done (toothpick inserted in center should come out mostly clean with only few moist crumbs)
  8. Allow carrot cake to cool in the pans for 10 minutes, then invert onto cooling rack to cool completely.
  9. I have sliced the top layer of the cake for frosting to even the surface, this is optional
  10. Combine butter and cream cheese in a large bowl and beat until creamy, well-combined, and lump-free.
  11. Add vanilla extract and sprinkle salt into the bowl and stir well to combine.
  12. gradually add powdered sugar until ingredients are completely combined
  13. Now place the first cake and frost evenly
  14. Place second cake on top and frost on top and sides. I had divided the frosting to make carrot design on top. Frost and design as desired. Now slice and serve
