ABOUT Carrot - Nuts Cake RECIPE

Vegetables and nuts, two things extremely essential for a growing kid. Kids are generally fussy about food essential for their health. so here’s an easy, hassle free and quick cake to satisfy the sweet cravings of any kid plus provide them the essential nutrients

Ingredients Serving: 10

  1. Dry ingredients:
  2. 1 cup whole wheat flour
  3. 1 cup all purpose/fine cake flour
  4. A dash of salt
  5. 2 teaspoon baking powder
  6. 1 teaspoon baking soda
  7. 1 teaspoon ginger powder
  8. 1.5 teaspoon cinnamon powder
  9. Wet ingredients:
  10. 3 whole eggs
  11. 1.5 teaspoon vanilla extract
  12. 2 cups white sugar
  13. 1/2 cup full coconut/vegetable oil
  14. other main ingredients:
  15. 1 cup of chopped almonds, walnuts(optional)
  16. 1 large carrot peeled, finely grated

Instructions

  1. Preheat the oven to 180 degrees celcius
  2. like any cake, we will prepare the dry and wet ingredients separately before incorporating them together
  3. for the dry cake ingredients, add all the dry ingredients listed expect nuts and carrot in a bowl and whisk well
  4. keep aside while we prepare the wet batter
  5. in a large bowl, add the sugar
  6. beat the eggs and add them to the bowl and whisk or beat until the sugar is well dissolved
  7. next add the coconut oil and whisk
  8. follow it up by adding the nuts and carrots
  9. give all the ingredients a good whisk
  10. now add the dry ingredients in batches and fold in using a spatula
  11. once done, add the batter to a greased cake tin
  12. tap a couple of times to level and release any air bubbles trapped in the batter
  13. place the cake tin on the center rack of the oven and bake for 35-40 minutes
  14. post baking, check by inserting a toothpick, if the cake is done
  15. cool the cake completely, before demoulding it
  16. store airtight and refrigerated until consumed
  17. enjoy!
