Amazingly crumbly pastry filled with Fresh Pineapple Jam

Ingredients Serving: 4

  1. PINEAPPLE JAM
  2. Pineapples fresh 2 medium
  3. Sugar 500 grms
  4. Cinnamon Stick 1
  5. PASTRY
  6. Flour 280 grms
  7. Powdered sugar 50 grms
  8. Milk pwdr 40 grms
  9. Corn starch 20 grms
  10. Butter 200 grms
  11. Egg yolks 2
  12. Egg wash
  13. Use the egg whites

Instructions

  1. Cut the pineapple ,remove the thorns and the seeds and grind it
  2. Take the pineapple pure , add the sugar and the cinnamon and cook till it thickens and darkens
  3. Set aside
  4. PASTRY DOUGH
  5. Sift the flour,cornstarch and milk pwdr
  6. Cream the butter and the sugar till.light and fluffy
  7. Gradually add 1 egg yolk and whisk
  8. Add another yolk and beat well
  9. Add the flour mix and whisk till everything has combined
  10. The dough will be soft, refrigrate for 30.mins
  11. Remove from the refrigerator
  12. Divide the dough into small balls
  13. Make sent not he balls and fill our pineapple jam in middle and seal them
  14. Place them on the baking tray and brush the Nastar with egg wash
  15. Refrigerate the cookies for 10.mins
  16. Bake in a preheated oven at 180D Celsius for 18 to 20 mins or till the tops turn golden
  17. Store in a airtight jar.
