ABOUT Tex-Mex Chili RECIPE

The ultimate comfort food which is hassle free and quick to make. This one pot meal needs no other accompaniment but can be had with Mexican rice or cilantro lime rice. It's a perfect dish for cold wintry night.

Ingredients Serving: 3

  1. 1 envelope McCormick chili
  2. 6 turkey bacon rashers chopped
  3. 2 chicken sausages sliced thinly
  4. 4 chicken salami chopped
  5. 1 onion minced finely
  6. 1 pack cremini mushrooms sliced
  7. 4 sweet peppers cut in roundels
  8. 1 pack Brussels sprouts washed, cleaned, and halved
  9. 1 can organic black beans drained and rinsed
  10. 4 oz cream cheese
  11. 2 tbsp sour cream (or thick yogurt)
  12. 1/2 cup full cream
  13. 1 tsp garlic powder
  14. 1 tsp onion powder
  15. 1 tsp oregano
  16. 1 cup shredded Mexican or mozzarella cheese
  17. Chili flakes for garnish
  18. Dried parsley for garnish
  19. 1 tbsp butter
  20. 2 tbsp olive oil

Instructions

  1. Preheat oven to 400 deg F (200 deg C).
  2. Heat oil and butter in a cast iron skillet. Keep flame on medium high.
  3. Stir fry sausage, bacon, and salami for 5 minutes.
  4. Add onions and saute till they sweat, about 3-4 minutes.
  5. Add mushrooms, peppers, and Brussels sprouts. Saute till Brussels sprouts wilt a bit, 5-7 minutes. Add the beans and stir well.
  6. Add the McCormick chili mix packet to the dish and mix well to coat the spices with veggies and meat.
  7. Cook for couple of minutes and then add the cream cheese, sour cream, and full cream. Mix well.
  8. Add the garlic powder, onion powder, and oregano. Mix again. Switch off the gas.
  9. Sprinkle cheese all over the dish. Sprinkle chili flakes and parsley over the cheese.
  10. Bake in oven for 15 minutes or till cheese is nicely browned. Remove from oven and serve immediately.
