ABOUT Mixed vegetable with fries RECIPE

Seasonal vegetables delectably cooked with Indian herbs and spices and complemented by nutritious lentil and kidney beans . Super scrumptious!

Ingredients Serving: 4

  1. Lentils: 1 cup
  2. Kidney beans: 1 cup
  3. Garlic cloves: 2 minced
  4. Celery Stalks: 2 diced
  5. Carrots: 2 shredded
  6. Onion: 1 large finely chopped
  7. Tomato puree: 1/2 cup
  8. Green bell pepper: 1 diced
  9. Cumin powder: 2 tsp
  10. Turmeric: 1 tsp
  11. Red chilli powder: 2 tsp
  12. Garam masala: 2 tsp
  13. coriander- handful chopped
  14. oil
  15. Salt to taste
  16. Water as needed

Instructions

  1. In a pressure cooker boil lentils and kidney beans till soft.
  2. In a large pot over medium heat, add oil, garlic clove, carrots, celery, onion and bell pepper. Sautee for 10 mins till tender.
  3. Add tomato puree. Season with cumin powder, turmeric, red chilli powder, garam masala.
  4. Add boiled lentils and kidney beans.
  5. Add 2 cup of water. Bring the mixture to a boil. Simmer for 20 min, stirring occasionally. Cook until liquid is reduced.
  6. Add salt to taste. Garnish with coriander.
