Boil the eggs in salted water and immerse them in cold water. And remove the shell
In the mixi jar add washed mint, coriander leaves, grated coconut, green chilli, ginger garlic cloves then add needed water and grind a smooth paste
After take the pan add some oil and pinch of turmeric powder, garam masala, coriander and cumin powder, chilli powder mix well . Make a small slits on the boiled egg with help of tooth pick or sharp knife. Then fry them in masala powder until slightly golden brown colour.
In the same pan add some oil,sliced potato on sprinkle little salt fry till it becomes soft. And keep aside
Next in the same pan add sliced onion fry them till they translucent.
Next add grinded mixture to the fried onion. As the mixture turns to little brown. Now add salt and kasuri methi and cook it for few minutes
Further add the spices in the mixture. Stir well and then add finely chopped tomato cook it turns soft and mushy. Now add half lemon juice , and fried potatoes. Add water as needed mix well.
Additionally add boiled eggs in mixture. Cook it for 5 mins in low flame.
Finally serve egg mint Curry With rice, roti, or chapati..
