ABOUT Malabar Dates Pickle RECIPE

Delicious sweet , mildly spiced and tangy Pickle from Malabar, Kerala

Ingredients Serving: 4

  1. 250g Dates
  2. 3 tbsp Vinegar
  3. Salt to taste or 1/2 teaspoon sugar
  4. 1 tbsp sugar
  5. 1 sprig curry leaves
  6. 3 tbsp oil
  7. 1 tbsp red chilli powder
  8. 1/4 teaspoon hing
  9. 4 green chillies finely chopped
  10. 1/4 teaspoon turmeric
  11. 1 teaspoon mustard seeds
  12. 1 tbsp ginger paste
  13. 1 TBSP GARLIC PASTE

Instructions

  1. Deseed and roughly chop dates
  2. Heat oil in a pan. Splutter mustard seeds, curry leaves and hing
  3. Add ginger paste, garlic paste and green chillies. Saute until raw aroma disappears
  4. Add spice powders and saute for 2 minutes
  5. Add dates and cook until it softens
  6. Add salt and sugar. Mix well. Dates should be well coated with all spices and salt. Saute for 2 minutes
  7. Add vinegar and mix well. Saute until pickle/ mixture comes together. Switch off
  8. Allow to cool completely. Serve with papad and Biryani or Parottas
  9. Store in cool dry place in sterile airtight container for any leftover pickle
